What will happen if I

Take the fuel plate out and leave it out? What is the good and bad of doing this?

i heard not good. something about the arm will come down and get stuck. i cant remember im waiting for a more educated 12v to chime in

From what I undertand it is not the best thing to do you could potentialy break break the rack stop pin. Why not just grind anice 100 or if you like just do a zero plate which is the same as no plate.....

I once heard a guy say that anyone who takes out the plate and takes out the afc arm should be shot,because it gives 12v's a bad name.Regardless Id stick with a zero if I were you

There are two problems with taking the plate out- one is that the governor arm has nothing to travel on and this can cause binding of the rack, premature wear and breakage.
The main problem IMO is that removing the plate is giving you worse driveability, more smoke for no gain in the horsepower department.
I'd suggest that you grind a 100 plate and either do an AFC spring kit or at least adjust the AFC.
You will have more than enough fuel for the turbo you have but when it's properly tuned you will not douse the fire under low boost conditions. You can tune the 12V up to a point where you have minimal or at least very manageable smoke daily driving with no downside to the 0-60 times it runs. Naturally smoke is "cool" but basically it's just a show to make people see that you like to annoy others by wasting your money.
