Don't know if you can make bacon from hippo meat.
Some trivia: Generally speaking, hippo meat is illegal, but is often sold in the African markets. The skin of the hippo can be up to 2 inches thick and can be boiled for soup. The skin is also made into whips.

I would definitely kick it. If it started to chase me I would cut a quick left or right and run circles around it till it fell over.
This reminds me.
When I was living in Hawaii many years ago, a elephant went on a rampage and tore through the circus tent. Went crazy and started running over anything in it's path. Locals were shooting it w/ little guns but it kept on trucking. I think they finally pumped it with enough lead after it killed a few people.

On the National Geographic Channel television program, "Dangerous Encounters with Brady Barr", Dr. Brady Barr measured the bite pressure of an adult female hippo at 1,821 lb (826 kg); Barr also attempted to measure the bite pressure of an adult male hippo, but had to abandon the attempt due to the male's aggressiveness.[27]
Hippos measure 3.3 to 5.2 meters (11 to 17 ft) long, including a tail of about 56 centimeters (22 in) in length and average about 1.5 meters (5 ft) tall at the shoulder.[28][29] The range of hippopotamus sizes overlaps with the range of the White Rhinoceros; use of different metrics makes it unclear which is the largest land animal after elephants. Even though they are bulky animals, hippopotamuses can run faster than a human on land. Estimates of their running speed vary from 30 km/h (18 mph) to 40 km/h (25 mph), or even 50 km/h (30 mph). The hippo can maintain these higher speeds for only a few hundred meters.

I heard somewhere they were one of the number one killers in Africa.
You see, they have a short burst of straight line speed. It could never throw all that weight around and catch me running in a circle. It's much like our trucks, they are only good for the straight shots.
