how much material is encoded in 7.1 Dolby Digital?

how much material is encoded in 7.1 Dolby Digital?
i got a used Pioneer 7.1 receiver for a good deal,
but i am not sure it is worth hacking up the house to wire in 7 speakers,
if not many movies/TV/sports are encoded in 7.1
was 7.1 a passing fad?
7.1 via analog inputs.
2 fronts,
1 center,
2 surrounds, and
2 surround backs.
It does not have HDMI. Does DTS ES, Dolby Digital EX, Dolby Pro Logic II.
2 Component video inputs,
3 Optical
2 coaxial audio inputs,
4 S-Video inputs.
Pioneer VSX-D811S. 700 watts.

slice, i seem to remember a rear center channel, but this is just 4 surrounds.
2 by your seat, and
2 in very rear of room.
so a fly-by would go from front, to beside you, to rear.
i dunno.
