Got it all worked out...Rick at Diesel Tune in Farmington is a stand up guy. Again, thanks for the reccomendation! After three days of trouble shooting (and scaring the hell out of me.....it was looking to be a bad P7100.) Rick said he's only had 3 bad ones in the last 8 years. Because of this track record, he refused to believe this was the problem. So more testing. I was also getting nervous because we had to get on the road home for work. While checking to see if the timing had slipped, which it hadn't, Rick went ahead and advanced the timing to 15 degrees.
It turns out that the pick up assembly, inside the tank was sucking air. So he put in a new assembly, after checking all fuel hoses, which are in perfect working order, (again something fairly unusual for a truck 11 years old with 260K miles.)
Wow, it's like a new truck again. I'd forgotten how much BLACK smoke this thing used to make.
Rick's rates are VERY reasonable, A whole lot less than I was expecting, and even pushed my truck ahead of the others to get me back on the road. His customer service is excellent.
I ran 800 miles in 11 1/2 hours (with one fuel stop and probably four potty breaks for my wife and I.) and averaged 18.5 mpg.
Now all I need to do is get my tires balanced, and I'll have myself a 3/4 ton cadillac.

Good Deal! I'm glad it worked out and Rick was able to get you back on the road without it costing an arm and a leg. Many shops would have thrown an injection pump at it without ever really troubleshooting it.
