newbie questions

Morning all,
This is probably going to sound like a repeat post and I'm sure a lot of y'all are going to shake your head with a thought along the lines of "dam- I mean darn new guys" but after reading what feels like a lot of different posts, I wanted make a list of what all y'all would recommend to do with a stock truck.
Okay, from what I can gather so far I should:
1) Do a EGR and DPF delete. Probably should do the "Cali delete" just in case I move to a state that requires emissions.
2) Change/install a H&S or a Smarty tuner to stop the dirty girl from throwing codes
3) Don't worry about my intake as all its good for is hearing my turbo better(True?)
4) Don't worry about straight piping unless I go full send and do a full delete
Is this a good starter list?
Okay, now that I've done that, here is my background, and in case it doesn't pop up in my signature, my truck. I'm a first time diesel owner, and I enjoying doing as much work on my vehicles myself as I can. I'm definitely a youtube mechanic haha. Brake change? CHECK! Fuel Filter change? CHECK! Me and my 1-1/2 ton jack are gonna fix or break(more likely) everything. My truck is a 2008 Dodge Ram 2500 6.7 Liter MegaCab with the Laramie package and 127K miles. It came with a PPEI tuner that is running a 30HP Towing boost and the EGR is unplugged. That's as much as my nearsighted eyes can see so far. OH yeah! I also have a sticky engine break. It likes to randomly stick closed when I first start it cause (and I am assuming here) the previous owner hardly ran it.
Anything else y'all would recommend to do to her?
