Truck shut off while driving!

Okay, major ***. First time this has ever happened in owning this thing for 18 years. 165k on the clock. Stock with S&B intake, 5" exhaust, +50 injectors and a custom tune on the MM3. 6sp manual.
I have my camper loaded and towing my enclosed trailer (gross combined weight around 27k), cruising downhill on Hwy 89 south of I-70 in Utah, going maybe 50 mph in 5th gear and was jamming out to a tune. I don't remember if my exhaust brake was on or not (i.e. if I was on the throttle or not). Then my carplay receiver goes black. At first I'm irritated that it did that again... a moment later I realize wait, no, THE WHOLE TRUCK WENT DEAD. The odometer is off, speedo and tach are bottomed, motor isn't running. Clutch in, turn key to start and it made that grinding noise it makes if you try to start it with the motor running. Another ***. So I slowed and pulled over as quickly as I could given no power steering or brakes.
Sat there for a moment. Turned the key off, then on, then tried to start it. Fired right up like nothing happened. I checked the codes in the MM3... nothing unusual. Something about low voltage on the exhaust brake (that's a new one), one about fan speed that's been around for years, and one other one I don't remember but it was one I had seen before.
I made it to the campground I was headed for.... ran just fine. But now I'm a bit worried it'll happen again. I don't have a clue what the cause might be or how to diagnose it.
