Is there anyway to get the level six OFF of my truck?

The edge does not down load anything to the truck. So do you want to remove the Edge completely or just change the settings? Your attitude is your interface to the Edge and you can set it any way you want.

If you need a manual to tell you how to change the settings you can get one from the Edge site.

If I read the manual correctly, all you need to do is disconnect the power to the edge and it defaults to levels 1-5, you have to re-enter your code to get level 6 back,

cant understand why you would want to erase level 6, as if you dont need it dont turn it on 6??
