I always finger load the center of the hub assembly and leave enough room to slip it back on the spindle without pushing the grease back out the front.
If you don't put some grease in the hub center, when the grease that is in the wheel bearing gets hot and starts to liquify it runs out of the bearing and into the empty hubcenter never to return to the bearing, however if there is grease in the hub center it will force the liquified grease to stay in the bearing. Its just a question of how much grease to use, too much and your gonna pop wheel seals, not enough and you run the bearings dry.

Dexter says to pump it through their center grease fitting until it pushes past the castle nut.... That is how I have alway done it and my trailer is going on 275K miles and 6 years on the original bearing. I have bent axles and broken springs but I have never lost a bearing.
I am using Schaeffer Grease #229 >>> Great Stuff!
