Chile Verde Recipe
Are you looking for a sauce or salsa or a burro filling?
When i don't have good chilis on hand to roast, I like El Pinto Green Chilis in a jar. I'll strain the chilis out of the juice then slow cook some cheap chopped pork, like shoulder or country rib meat in it. Roll that up in some fresh tortillas with a bit of cheese and go to town.
When Hatch has the big chili festival in Nm, we get a bunch and i'll roast them on the grill then put them in the bbq along with a shoulder for about 8 hours. pull the pork and toss in the smoked chilis. Good stuff

Chili Verde
One pork shoulder roast - roasted, cooled out, boned and stripped of as much fat as you can get off of it. (or, use a leaner cut like loin and cook it in slow cooker - I don't think it's as tasty, though).
Shred up the meat. Put in large heavy pot, add a couple of chopped yellow onions, two large cans diced green chilies, a can of green enchilada sauce (La Victoria is OK - or try out some of the Mexican brands, better!), a teaspoon of salt, and enough water to set it stewing. If you want it HOT, add finely chopped hotter green peppers - jalapenos, whatever turns your crank. Personally, I like it mild and let Hubby add his own heat!
Cook over very low heat (slow cooker is perfect) for two hours - more won't hurt it. Great as burrito stuffing, even greater the next morning for huevos rancheros verde style.
Lotsa shredded jack cheese and fresh homemade flour tortillas, fresh homemade frijoles and arroz la mexicana, yum!
