Normal operation of a CDT.

Drive it like you stole it.

In order to have oil pressure, the oil has to get to all the places it needs to go(bearings), then it has to "back up" until it reaches the sending unit. When it takes a few seconds to come up to pressure, that's a good thing. That means it's flowing for a while untill all the spaces are full. If it stays low, there's a place where it's moving to quickly and bypassing the necessary bearings. If it's too high, there's restriction somewhere.

It does take a few seconds to get a reading on the gauge. People who have added a mechanical oil pressure gauge say it is less than 1 second. The dash gauge is computer controlled and is delayed. After starting the truck the computer is checking all the sensors before it worries about showing oil pressure. This adds another second or two before the gauge responds.
