Those are on the non intercooled. Your cycling switch should protect the compressor. Fyi, if the hoses are tight, they can endure higher pressures than the compressor.
The biggest fault on conversion's is poor choice in oil and incorrect charge. More freon will only make less cold air if you are over chsrged. Your just loading up the compressor.

I am pretty sure the hex plug on the side of the drier is just that, a plug,
i have a few of them from when I replaced mine.
On other Mopar applications I have seen high pressure cutout switches mounted there.
All of our pressure switches are mounted on the h-valve (expansion valve)
