which engine

I'm planning to build a mid-90s Ford as a replacement for my current 3/4 ton over the next two or three years and I'm trying to get some advice. The truck will be a daily driver most of the time but occasionally it will tow well beyond its ratings. So the question is what are the ups and downs of 12v verses 24v Cummins (ease of getting more power out of the 12v,is the 24v power worth the wiring and so on). I am a mechanic by trade so I can build the wiring harness and add power electronically or internally as I intend to rebuild whatever engine I end up going with. Thanks
