I recently bought the truck in my sig. I'd like to wire it up so I can see when the check engine light would light up.

The motor is a 2005 325 hp HPCR. Any clue on which wires to tap into to get the signal for the CEL?

The Cummins ECM doesn't have a signal for an CIL that I know of. I think the dodge pcm controls the CIL.
