Fly Cutting Pistons

I have seen this reference several times. What does it mean. Are these the valve reliefs you see on the top of the piston or something completely different. I have gathered they are added for high lift cams.

It's cutting valve reliefs in the pistons when installing high lift cams or different heads that might require it. Usually done with the pistons still in the block using a special tool.
