engine operating temp

just wanted to know what the engine operating temp should be. i remember my truck use to run about 208-210f. now its runnning about 192f max. its about 30-40f outside. could the cold weather be causing the lower temp?

Once warmed up my runs around the 190f mark. I don't exactly, but usually stays there. That is year round. It will go up to 210f-ish if I'm hard on it or taking off with a load. But it usually always settles in around 190f crusing.

190 - 200f depending on oat and load on truck.
